The Legend of Jim & Pablo ⚔️
Jim showed up on the ranch only days after the Happy Habaneros — road-worn, battle-hardened, and accompanied by a large Poblano pepper by the name of Pablo. They both looked like they’d just crawled off a battlefield. Because they had.
The story has unfolded slowly, in pieces, the way all great legends do. It traces back to the Mexican-American War of 1845, when Texas and Mexico were fighting over which river divided their lands. Somewhere along the banks of the Rio Grande, Jim Grim went down — mortally wounded, Mexican soldiers advancing, the cry of ¡GRINGO! echoing across the water.
It was Pablo Poblano who pulled him out.
Jim knows it. He’s never said it out loud — that’s not his style — but he treats Pablo like his own son. Maybe that’s the only reason he wound up here at all. And maybe that’s exactly why the two of them ended up in the same bottle.
