Ingredients

  • 4 bell peppers, halved and seeded
  • 2 cups shredded chicken breast (rotisserie works great)
  • ½ cup plain Greek yogurt
  • ½ cup Tennessee Bob’s Hillbilly Hot Sauce
  • ½ cup reduced-fat shredded mozzarella, divided
  • 2 tbsp sliced green onions (for garnish)

Instructions

Step 1: Preheat

Preheat your oven to 375°F. Arrange the pepper halves cut-side up in a baking dish.

Step 2: Make the Filling

In a bowl, mix together the shredded chicken, Greek yogurt, Hillbilly Hot Sauce, and half the mozzarella until well combined.

Step 3: Fill & Top

Spoon the chicken mixture generously into each pepper half. Top with the remaining mozzarella.

Step 4: Bake
