Buffalo Chicken Stuffed Peppers

Ingredients (serves 4):

  • 4 bell peppers, halved & seeded
  • 2 cups shredded chicken breast
  • ½ cup plain Greek yogurt
  • ½ cup hot sauce
  • ½ cup reduced-fat mozzarella

• 2 tbsp green onions

Instructions:

  1. Preheat oven to 375°F.
  2. Mix chicken, yogurt, hot sauce, and half the cheese.
  3. Fill peppers, top with cheese.
  4. Bake 25 min until tender. Garnish with green onions.
