Hillbilly Chili

Ingredients
- 1 lb ground beef
- 2 cups tomato paste
- 2 cups pinto beans (canned, drained and rinsed)
- ½ red onion, diced
- 4 cloves garlic, minced
- 2 poblano peppers, diced
- 2–3 tbsp Tennessee Bob’s Hillbilly Wing Sauce (plus more to taste)
- 1–2 tbsp Hillbilly Spice of Life dry rub
- 1 tbsp liquid margarine or butter (for sautéing)
- 1–2 cups water (to adjust consistency)
- Salt to taste
Instructions
Step 1: Sauté the Aromatics
In a large pot or Dutch oven over medium heat, melt the margarine or butter. Add the diced poblano peppers, red onion, and garlic. Pour in a good splash of Hillbilly Wing Sauce — it doubles as your cooking liquid and flavor base. Sauté for 5–7 minutes until softened and fragrant.
Step 2: Build the Base
Stir in the Spice of Life dry rub and a splash of water. Cook down for 2–3 minutes, stirring, until it thickens into an almost rue-like paste. This is where the deep flavor builds.
Step 3: Brown the Beef
Add the ground beef to the pot. Break it apart and cook over medium-high heat until fully browned, about 6–8 minutes. Drain excess fat if needed.
Step 4: Add Tomato & Beans
Stir in the tomato paste and 1–2 cups of water to reach your desired consistency. Add the pinto beans and stir everything together. Season with salt and more Hillbilly Wing Sauce to taste.
Step 5: Simmer & Serve
Reduce heat to low and simmer for 20–25 minutes, stirring occasionally, until the chili is thick, rich, and deeply flavored. Taste and adjust seasoning. Serve hot. 🤠
