Tennessee Bob’s Queso Dip
Spicy, cheesy, and impossible to stop eating — this queso dip is the life of any party. Three melty cheeses, fresh jalapeño, roasted red bell pepper, and a generous pour of Tennessee Bob’s Happy Habanero Hot Sauce come together in one skillet in under 15 minutes. Garnished with fresh cilantro and pomegranate seeds for a bold, festive finish.

Ingredients
The Base
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 medium jalapeño, finely chopped
- ½ cup red bell pepper, chopped
The Cheese Blend
- 1 cup sharp cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- ½ cup cream cheese, softened
- ¼ cup whole milk (add more to adjust consistency)
The Heat & Seasoning
- 3 tbsp Tennessee Bob’s Happy Habanero Hot Sauce (adjust to taste)
- ¼ tsp smoked paprika
- ¼ tsp ground cumin
- ¼ tsp ground cinnamon
- Salt and pepper to taste
Garnish & Serving
- Fresh cilantro, chopped
- Pomegranate seeds
- Tortilla chips or fresh veggies for dipping
Instructions
Step 1: Sauté the Veggies
Heat olive oil in a medium saucepan or skillet over medium heat. Add the onion, garlic, jalapeño, and red bell pepper. Cook for 4–5 minutes, stirring occasionally, until softened and fragrant.
Step 2: Melt the Cheeses
Reduce heat to medium-low. Add the cream cheese first and stir until melted and smooth. Then add the shredded cheddar and Monterey Jack, stirring continuously until fully melted and combined.
Step 3: Add Milk & Season
Pour in the milk and stir to reach your desired dipping consistency. Stir in the Happy Habanero Hot Sauce, smoked paprika, cumin, cinnamon, salt, and pepper.
Step 4: Simmer
Let the queso simmer on low for 2–3 minutes, stirring, until everything is silky smooth and well combined. Taste and adjust heat with more Happy Habanero as needed.
Step 5: Garnish & Serve
Transfer to a serving bowl or keep warm in the skillet. Top with fresh cilantro and pomegranate seeds. Serve immediately with tortilla chips or veggies. 🌶️
